L.O.O.P. ~ LeftOvers On Purpose

"LeftOvers On Purpose"  is the term my friend Kathi uses in her new book, "The What's for Dinner Solution" to describe dinners that use what you've already made for dinner as another meal later in the week.
We have all done this at one point or another.  Whether it's Tuesday's chicken pot pie from the roasted chicken on Sunday or Thursday's chili verde burritos from Monday night's pot roast I'm sure you feel the same as I do when you create such a recipe,  ::sneaky:: resourcefull:: and just plain ::awesome::!
Well, today I wanted to share with you a true gem.  Possibly a stroke of cullinary genious.  I may not be the first to have discovered it, but since I'd never heard of anyone doing it before I felt VERY orriginal!

You've all tried the Pioneer Woman's chicken spaghetti right?  I put it on my menu last week because it's comfort food and it's comfort food weather around here.  Well, my husband and I love it, but I didn't realize that my kids don't "love" it! (shock of all shocks, because most normal kids devour it!)  So, needless to say we had some leftovers.  Are you ready for this?  I made it into ...
Chicken Noodle Soup!!!!!

A little onion and garlic in the pan, toss in some carrots and celery, add chicken broth and when the veggies have cooked until soft, add the leftover chicken spaghetti.  Warm through and voila!!!!



It was amazing!!!
 I love LeftOvers On Purpose... don't you?
