This week, I'm so very excited to get my first CSA box delivered to my house from Farm Fresh To You. (If you sign up for this service, please let them know that I referred you. You'll get a discount and so will I!) This will most certainly change our menu for this week after it arrives, but I'm anxious to get my meals planned out as best I can.
Monday: My wonderful parents are taking us out to dinner (I'm thinking Fresh Choice!)
Tuesday: Seasame Noodles with Shrimp; of course these will be "vegged up" by adding raw carrot spirals, raw broccoli florets,
Wednesday: Salad, with a side of Brussels Sprouts (I haven't chosen the recipe yet... but it will come from HERE)
Thursday:Curried Potatoes and Chick Peas; I'm excited to see if I can get from the farmers market some of the different types of potatoes mentioned in this cool photo index!
Friday: Cream of Parsnip Soup; I hope we get some parsnips in our CSA box, so that I can try THIS recipe for dinner! (With some adaptations of course!)
Saturday: Farmer's Market Surprise!
Last week we had spaghetti squash for our Farmer's Market Surprise, and I have to say I'm AMAZED that I've never made this before... what a healthy fun treat for our family. My MOPS friend mentioned it on Facebook, so I specifically looked for it at the market. YUM!
I'd love to hear from you on your menu ideas this week as well as any suggestions you may have on how to use local in season produce!

Glad you liked the spaghetti squash - I agree, it's totally awesome!
Tonight, inspired by our conversations about "health-ifying" meals, I'm testing Butternut Squash, Chickpea and Red Lentil stew (Pinterest! :-) with a side salad and possibly some biscuits.
oh, and I've definitely see purple potatoes, russet, and yukon gold at the farmers' market!
I LOVE Spaghetti squash! It cooks in microwave easily if you have the oven busy!
I wish I lived in your area to know what your local produce was like. our seasons are so different. In Oklahoma, right now we can get winter squashes, spinach, kale, broccoli, potatoes and onions, radishes, apples, and a variety of greenhouse greens and tomatoes (which aren't as good as the sunshine kind). When march hits we'll have a lot more, but the pickin's are a little slim for us in the winter. Especially on fruits.
My kids love squash and apples mixed together with cinnamon, which we call squapplesquash. At the prompting of our restaurant chef, I've also started peeling butternut squash with a potato peeler, then dicing and sauteing. So easy and really delicious.
What great ideas Heather! Yes, California weather is a bit different than what you have there in OK! It makes for a very fun Farmers Market when I've found the time to go. Thanks for your ideas! Love the Squapplesquash!!! Can't wait to try it! We are trying to eat a lot of foods 'raw', but I still enjoy cooking and think there's just no way to eat things like potatoes, and squash and other things without cooking them!
